Gooey Dark Chocolate Zucchini Cake – Just Eat Real Food

This recipe was my first foray into paleo sweets and it is also the first recipe that I converted into a thermie recipe. All I did to convert it was to follow the instructions on the Summary Table For Basic Functions.
INGREDIENTS
- 2 1/2 cups shredded zucchini
- 1 1/2 cup almond meal
- 1/2 cup flax seed meal
- 1 tbs dark Dutch processed cocoa
- 1 tsp baking soda
- 1 tsp salt
- 3 eggs
- 1 tsp vanilla
- I tbs molasses
- 2 tbs raw honey
- 150 grams of the best 85% or higher dark chocolate you can buy
Slice the zucchini into chunks and blitz in the Food processor using the S-blade for 15 to 20 seconds. Or until finely chopped. Scrape into teatowel and squeeze out excess water.
Add all dry ingredients, then wet ingredients to the food processor except the chocolate and mix until well combined.
Add the chocolate, I left it in the small squares so it would melt inside the bread whilst baking.
Put the mixture into a lined loaf tin and bake at 176.66 degrees for 40 minutes.
Serve warm…it is irresistible.

Yummy does it taste as good as I looks
I think it is delicious :). The texture is better now that I squeeze the liquid out of the zucchinis!
